Kosher for Passover Sushi

This kosher for Pesach sushi recipe is a clever, tasty workaround that uses cauliflower instead of rice and substitutes soy sauce with Passover-approved alternatives. It's fresh, light, and totally compliant with Pesach dietary rules.

Ingredients
  

Cauliflower Rice
  • 2 packages frozen Bodek cauliflower checked
  • 1 tsp sugar
  • 1 tsp Passover soy sauce
  • 1 tsp Passover vinegar
Sushi Fillings
  • avocado sliced
  • carrots julienned
  • cucumber julienned
  • salmon cooked or raw
  • tuna or spicy tuna
  • grilled chicken
  • sliced steak
Additional Items
  • Kosher-for-Passover nori sheets

  • Sharp Knife

Method
 

  1. Grate frozen cauliflower in a food processor until it resembles rice grains. Squeeze out moisture in a dish towel. Rest 20 minutes and repeat if needed.
  2. Transfer to a bowl and mix with sugar, Passover soy sauce, and Passover vinegar.
  3. Lay a nori sheet (shiny side down) on a bamboo mat. Spread a thin layer of cauliflower 'rice' with moistened hands, leaving a 1-inch margin at the top.
  4. Place fillings in a line across the center. Roll from the bottom using firm pressure. Wet the top edge to seal.
  5. Slice into pieces using a moistened sharp knife. Clean between cuts for best results.

Notes

Serve with kosher-for-Passover dipping sauce like horseradish dip or Passover soy sauce. Store in an airtight container in the fridge for up to 2 days. Do not freeze. Avoid overly moist fillings.
